Chicago’s first meadery will feature classes, hold events and tastings, and a bar in-house to enjoy Wild Blossom’s locally produced libations. Mead is one of the oldest alcoholic beverages in existence, and is created by fermenting honey with yeast, which will be done with local honey—produced in onsite beehives. To accommodate the 9,000 sf winery, brewery and meadery, we converted a former warehouse on Chicago’s south side neighborhood Beverly. Honeycombs informed the planting patterns of the vegetated roof and the paving patterns of the landscape at Wild Blossom. More about the design process here.
